Ingredients

  • 4 boneless skinless chicken breasts
  • ½ cup half-and-half -OR- light cream
  • 1 - 1½ cups Italian flavor bread crumbs
  • 2 tbs olive oil (divided)
  • Sauce:
  • 2 tbs butter
  • 2 tbs finely minced garlic
  • 2 tbs flour
  • ½ cup chicken stock
  • 1 cup cream (heavy cream preferred)
  • ¼ cup grated Parmesan cheese
  • 2 oz softened cream cheese
  • 1 tsp salt
  • ¼ tsp white pepper

Instructions

  1. Using a meat mallet (smooth side), pound each breast between sheets of plastic wrap or wax paper to ¼-inch thickness. This will give you a pretty large piece of chicken, so what I do is cut each pounded-down breast in half lengthwise.
  2. Heat a large skillet over medium heat; add 1 tbs of the olive oil.
  3. Dip each piece of chicken in the cream, letting excess cream drip off, then dredge in the Italian bread crumbs. You will probably have to cook the chicken in 2 batches.
  4. Place chicken in hot skillet, browning well on each side, about 5 minutes each side, until chicken tests done (175 degrees F or juices run clear when you cut.
  5. Add remaining 1 tbs of oil and repeat browning with remaining chicken.
  6. Place chicken on a platter, cover and keep warm in a 200 degree F oven.
  7. Wipe out the skillet, if desired.
  8. Melt the butter over medium heat and add the garlic.
  9. Cook garlic until it becomes fragrant--about 3-5 minutes--don't let it brown!
  10. Add the flour and blend it well into the butter/garlic. Let this cook about 1 minute.
  11. Slowly add the chicken stock stirring constantly until there are no lumps.
  12. Slowly blend in the cream then add the salt and pepper. Cook for about 5 minutes.
  13. Add the Parmesan and cream cheese and stir until the cream cheese melts and blends into the sauce.
  14. Pour sauce over chicken and serve immediately.
  15. Serves 4 hearty appetites, 8 light appetites

Ingredients

  • 1 tablespoon mustard
  • 1 clove garlic, minced
  • 4 (15 ounce) cans pork and beans
  • 1/2 teaspoon black pepper
  • 1 green pepper, diced
  • 1 pound bacon, chopped into 1/2-inch pieces
  • 1 yellow onion, chopped
  • 1 cup ketchup
  • 2/3 cup brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven or smoker to 325 degrees F.
  2. Chop bacon and fry in a large pan or cast iron skillet over medium-high by stirring with a wooden spoon until crispy. Transfer to a plate lined with paper towels using a slotted spoon, then remove all but about 1/4 cup of the bacon drippings.
  3. Add the onion and green pepper to the pan with the bacon grease and sauté over medium heat until they have softened and begin to caramelize, around 5-7 minutes. Add garlic and continue to cook and stir for another 30 seconds.
  4. Add beans, reserved bacon, ketchup, brown sugar, Worcestershire sauce, mustard, and black pepper and stir to combine. Bring to a simmer, then transfer the pan to the oven or smoker if using a large, oven safe cast iron skillet, or pour the beans into a large 9x13-inch pan first before placing in the oven or smoker.
  5. Bake for 1-2 hours until the beans are hot and bubbly and have achieved the thickness you desire. Keep in mind that the beans will continue to thicken slightly as they cool.

Ingredients

  • 1 cup warm water
  • 1 teaspoon sugar
  • 1 tablespoon yeast
  • ½ tablespoon salt
  • 2 tablespoon olive oil
  • 2-3 cups flour
  • 1 cup pizza sauce (homemade or store bought)
  • 40-50 pepperoni slices
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a mixing bowl combine warm water, yeast and sugar and let sit about 5 minutes, until yeast is bubbling up.
  2. Add oil, salt and 2 cups flour with bubbling up yeast and mix well
  3. Add additional 1 cup flour and salt, knead until smooth
  4. Cover bowl with plastic wrap and let dough rest in a warm place for 20 minutes
  5. Preheat the oven to 400F and line a baking sheet with parchment paper
  6. Spray counter top with non-stick cooking spray and spreading the dough into a large rectangle about ¼”thick
  7. Spread pizza sauce over the dough, leave one edge of the dough free of topping
  8. Top with pepperoni slices and sprinkle shredded mozzarella cheese
  9. Fold over one edge and carefully roll the dough and toppings into a log
  10. Using a sharp knife, slice the pizza roll into slices that are about ¾ inch thick
  11. Place the slice on one side on the parchment paper and bake for 20-25 minutes or until lightly browned

Ingredients

  • 2 cups Whipped sweet potatoes You could truly use leftover mashed sweet potatoes from last night's dinner. If you use leftovers and they were sweetened, you may want to reduce the maple syrup a little.
  • 2 Ripe Medium to Large Bananas I squeeze them between my fingers and then whisk them smooth. You can also smash them with a fork and then whisk.
  • 2 tbsp Vanilla I suggest using the highest quality that you can find.
  • 1 tbsp Sun Butter
  • 1 tsp Baking Powder I make mine "heaping." It helps to make this dense muffin fluffier!
  • 1 tsp Baking Soda
  • 1 tbsp Cinnamon Again, the better the quality - the better your end results!
  • 1 tsp Pumpkin pie spice This is typically a mix of cinnamon, ginger, nutmeg, and cloves.
  • 1 2/3 cup Unsweetened Almond Milk Reduce this to 1 1/2 cups if you increase your maple syrup to 1/2 cup.
  • 1/3 cup Grade B Dark Maple Syrup You could increase this to 1/2 cup depending upon how sweet you want them. If you increase the syrup to 1/2 - reduce your almond milk to 1 1/2 cups.
  • 1 1/2 cups Gluten Free (optional) Oats
  • 1 cup Oat Flour
  • 1/2 cup Finely Ground Golden Flax Seeds
  • 3/4 cup Hemp Hearts

Instructions

  1. Preheat the oven to 350 degrees.
  2. "Squash" the bananas into a large mixing bowl and then whisk them smooth.
  3. Add in whipped sweet potatoes. Whisk to combine.
  4. Whisk in the vanilla and sun butter.
  5. Next whisk in the baking powder, baking soda, and cinnamon so that they are well distributed.
  6. The combined almond milk and maple syrup should total 2 cups of liquid. Adjust the almond milk according to the amount of maple syrup used.
  7. Whisk almond milk and maple syrup in.
  8. Slowly stir in oats, oat flour, ground flax seeds, and hemp hearts.
  9. Line 2 muffin pans with baking cups. Fill muffin cups about ⅔ full.
  10. Place muffin pans into your preheated oven. Bake at 350 degrees for 15 minutes. Turn pans and bake for the final 15 minutes.
  11. *Optional - Sprinkle with a little raw sugar, oats, or streusel topping.

  • 5 flour tortillas, 8-inch is ideal
  • 4 tbsp unsalted butter, divided
  • 3/4 cup sugar, divided
  • 3 tsp cinnamon, divided
  • 4 Granny Smith apples, peeled, cored and chopped
  • 1 tbsp lemon juice, fresh squeezed
  • 1/4 cup caramel sauce, optional
  • whipped cream, optional

Instructions

  1. Preheat oven to 400F degrees. Set aside a 12-cup muffin pan.
  2. Cut 4-5 circles from each tortilla using a circular cookie cutter until you have ~25 total. Place the piece into a large mixing bowl and add 2 tbsp melted butter, 1/4 cup sugar and 1 tsp cinnamon. Toss until coated.
  3. Flip the muffin tin upside down. Place the tortilla pieces in between muffin cups according to the video. Bake 6 minutes.
  4. Meanwhile, mix the chopped apples with lemon juice and the remaining sugar and cinnamon. Saute in a frying pan over medium heat with the remaining butter until soft.
  5. Remove tacos from oven and spoon apple mixture into them. Then top with caramel sauce and whipped cream. Serve and enjoy!

Instructions

  1. Preheat the oven to 400°F (200°C). Dice the bacon into smaller pieces and fry in butter over medium heat.
  2. Add ground beef to the pan and increase the heat slightly. Continue frying while stirring until the ground beef is cooked through.
  3. Chop dill pickles and tomatoes and add to the pan along with minced garlic, seasonings and ⅔ of the cheese.
  4. Grease a baking dish and add ground beef mixture.
  5. Mix eggs, cream and tomato paste in a small bowl. Season to taste.
  6. Pour the egg mixture over the ground beef and add the rest of the cheese on top.
  7. Bake for 15-20 minutes or until the casserole turns golden brown.
  8. Serve with lettuce and olive oil.

Ingredients

  • 19 oz graham crackers
  • 2 pounds fresh strawberries
  • 3½ cups heavy cream
  • 1 banana, sliced thin
  • ½ cup powdered sugar
  • 2 tsp vanilla
  • ¼ tsp salt






Instructions

  1. Cream powdered sugar, vanilla, and salt with the heavy cream in the bowl of a stand mixer. Beat until the cream mixture holds stiff peaks.
  2. Spread a thin layer of heavy cream mix in a 9x13 pan just to coat the bottom.
  3. Layer 5 graham crackers across the center of the pan, then 2 more,breaking them as needed to fit around the top and bottom edges.
  4. Spread a thick layer of heavy cream mix over grahams and top with a hearty layer of sliced strawberries.
  5. Place graham crackers on top of strawberries, then heavy cream mix, then layer of thinly sliced bananas.
  6. Repeat the graham-strawberries-cream layers 1 more time (3 times total) and you should reach the top of the pan.
  7. Refrigerate for at least 4 hours or overnight until the graham crackers have softened completely.
  8. Top with a few sliced strawberries or whole strawberries if you desired.
  9. Serve chilled.

Ingredients

  • 2 pkg crescent rolls (8 count)
  • 1 pound roast beef (deli/ thinly sliced)
  • 4 ounces Swiss cheese slices (or provolone)
  • Au Jus
  • 14 oz beef broth
  • 1 dash black pepper
  • 1 sprinkle garlic powder
  • 1 tsp corn starch


Instructions

    • Unroll crescents onto a large cookie sheet.
    • On each crescent place a slice of roast beef and a piece of cheese.
    • Roll crescents starting from the wide end and ending at the narrow end.
    • Bake at 375 degrees for 13-15 minutes, until crescents are a golden color.
    • Serve with Au Jus and enjoy!

    Au jus

    • Heat all of the ingredients in a small sauce pan over medium high heat whisking well. Bring to a boil and then remove from heat. Serve with crescents and enjoy.

  • 1½ teaspoons chopped fresh parsley or ½ teaspoon parsley flakes
  • Barbecue sauce or chili sauce for dipping, if desired

Instructions

  1. Heat oven to 350ºF.
  2. Lightly grease bottom and sides of jelly roll pan or shallow casserole dish.
  3. n large bowl, stir together all ingredients except barbecue sauce, using hands or spoon (I find using my hands is easier). Shape mixture into 1-inch balls. Place in pan.
  4. Bake 20 to 25 minutes or until brown. Immediately remove from pan.

  • 2-3 pound Chuck Roast

  • 4 large potatoes in large cubes
  • 2 stalks chopped celery
  • 2 tbs Italian Seasonings
  • 3 tbs A1 steak sauce optional
  • 3 cloves garlic

Instructions

  1. Place your pot on Saute.
  2. pour olive oil in and your roast just to brown both sides about 1-2 minutes per side.
  3. Remove roast and place potatoes carrots and celery in the pot.
  4. Top with onions and garlic. Pour wine and beef broth in the pot.
  5. Place your Roast right on top of the veggies.
  6. Spread seasonings over the top of your roast along with A1 sauce.
  7. Put your Pot on MANUAL HIGH PRESSURE for 55 minutes do a Natural release.
  8. Remove and enjoy!

Ingredients

    For the salad:
    • 1 teaspoon minced garlic
    • 1/2 pound raw shrimp, tails removed
    • 1/2 tablespoon butter
    • 1/2 teaspoon chili powder
    • 1/4 teaspoon cayenne
    • 1 1/2 cups sliced avocados (2 small)
    • 1 cucumber
    • 4 cups chopped spinach or baby kale
    • fresh chopped cilantro for topping
    • peanuts for topping
    For the dressing:
    • 1 1-inch piece of fresh peeled ginger
    • 3 tablespoons oil
    • 3 tablespoons lime juice (more to taste)
    • 2 tablespoons agave nectar
    • 1 1/2 tablespoons white miso (it’s like a paste – you can buy it at many regular grocery stores)
    • 1/2 teaspoon minced garlic
    • 1/4 teaspoon salt

    Instructions

    1. Heat the butter in a small skillet over medium high heat. Add the garlic and shrimp; sprinkle with the chili powder and cayenne directly in the pan. Saute for a few minutes on each side until the shrimp are no longer clear and have a nice golden color on the outside.
    2. Cut the avocados in half; cut lines through the avocado vertically and horizontally and scoop the flesh out with a spoon (like this). Peel and dice the cucumber. Chop the spinach or baby kale into small bite sized pieces. Arrange in a bowl with the shrimp.
    3. Puree all the dressing ingredients together in a food processor until smooth. Taste and adjust to your preferences. Pour the dressing over the salad and serve immediately (or store the individual parts separately in the refrigerator until ready to serve). Top with fresh cilantro and peanuts for crunch.

    Ingredients

    • 1/4 cup sun-dried tomatoes chopped, drained of oil
    • 2 tablespoons olive oil drained from sun-dried tomatoes
    • 1/2 lb chicken boneless and skinless (preferably, boneless skinless thighs), chopped
    • 1/4 teaspoon salt
    • 1/4 teaspoon red pepper flakes
    • 1/4 teaspoon salt
    • 4 roma tomatoes chopped
    • 1/4 cup fresh basil leaves chopped
    • 8 oz spinach fresh
    • 3 garlic cloves chopped
    • 8 oz spaghetti pasta
    • 3 tablespoons olive oil (use high quality olive oil or oil from the sun-dried tomatoes jar)

    Instructions

    1. Add chopped sun-dried tomatoes and 2 tablespoons of olive oil, drained from sun-dried tomatoes, to a large skillet, on medium-low heat.
    2. Add chopped chicken. I used boneless skinless chicken thighs and prefer to use them, but you can use chopped chicken breast, as well.
    3. Add red pepper flakes, and salt over all of the ingredients in the skillet.
    4. Cook on medium heat until the chicken is cooked through and no longer pink, about 5 minutes.
    5. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic to the skillet with chicken. Cook on medium heat for about 3- 5 minutes until spinach wilts just a little, and tomatoes release some of their juices. Remove from heat.
    6. Taste, and add more salt to taste, if needed. Cover with lid and keep off heat.
    7. Cook pasta according to package instructions, until al dente.
    8. Drain. Add cooked and drained pasta to the skillet with the chicken and vegetables.
    9. Reheat on low heat, mix everything well, add more seasonings (salt and pepper), if desired. Remove from heat.
    10. At this point, when the pasta and vegetables are off heat, you can add more high-quality olive oil. It's optional but really tasty! Or you can add more olive oil from the jar from the sun-dried tomatoes.

    Ingredients

    • 2 tablespoons of grape seed oil
    • 1 lb. of chicken tenders, diced
    • 2 tablespoons of grape seed oil
    • 2 zucchini, inspiralized
    • 1 large carrot, inspiralized
    • 1 red pepper, julienned
    • 1/3 cup of bean sprouts
    • 1/4 cup of fresh cilantro, diced
    • 1/4 cup of green onions, diced
    • sesame seeds (for garnish)
    • Spicy Peanut Sauce:
    • 1 garlic clove, minced
    • 4 tablespoons of peanut butter
    • juice of 1 lime
    • 3 tablespoons of coconut aminos (or tamari sauce)
    • 2 tablespoons of fresh cilantro, diced
    • 1/2 teaspoon of ground ginger
    • 1/4 teaspoon of red pepper flakes


    Instructions

    1. In a small bowl, whisk together garlic, peanut butter, coconut aminos, lime juice, ground ginger, and red pepper flakes. Set aside.
    2. Heat a large skillet to medium high heat. Add grape seed oil and chicken tenders. Saute each side for 3-4 minutes. Remove from heat and let sit. Dice when cooled.
    3. In the same large skillet over medium high heat, add 2 tablespoons of grape seed oil, zucchini noodles, and carrot noodles. Flash stir fry for 2 minutes, stirring constantly.
    4. Remove noodles and place in large bowl along with chicken, red pepper, bean sprouts, fresh cilantro, green onions, and spicy peanut sauce. Toss till all noodles are coated.
    5. Serve and garnish with sesame seeds.
