Ingredients

  • 5-8 packets of stevia sweetener
  • 4 TBSP cream cheese
  • 4 TBSP coconut oil
  • 4 TBSP cocoa powder
  • 4 TBSP butter
  • 2 tsp vanilla extract
  • 1/2 cup natural peanut butter (I prefer chunky)






Instructions

  1. Combine all of the ingredients together in a medium-sized bowl. Cover with a paper towel, and microwave for 45 seconds. Remove from the microwave, stir and continue microwaving for approximately 30 seconds or until everything is melted enough to mix easily.
  2. Once melted, use a whisk or fork to blend everything together well.
  3. Use a spoon or spatula to evenly distribute the mixture into an ice cube tray, silicone mold or muffin liners.
  4. Cover and freeze for at least 2 hours. Once frozen, remove them from your tray or mold and place them in a plastic freezer bag or container (because they are so high in fat they should easily fall out of the tray).

Ingredients

  • 2 lbs. boneless skinless chicken breasts (8 4-ounce pieces)
  • 1 cup whole wheat Italian style bread crumbs
  • 6 tablespoons grated Parmesan cheese, divided
  • 5 ounces fresh baby spinach
  • 1 clove minced garlic and olive oil for sauteeing
  • 1/2 cup part-skim ricotta cheese
  • 1/3 cup beaten egg whites (I used something similar to Egg Beaters)
  • 3 ounces fresh mozzarella cheese, thinly sliced
  • 1 cup marinara sauce
  • fresh basil for topping

Instructions

  1. Prep the chicken: Cut the chicken into 8 pieces and pound the pieces until they are thin (for quick cooking) and have expanded in surface area (for more filling). Place the breadcrumbs in a shallow bowl with 2 tablespoons of Parmesan cheese and set aside.
  2. Prep the filling: Chop the spinach and saute it with the garlic and just a drizzle of olive oil for 2-3 minutes or until just barely wilted. Combine the sauteed spinach with the ricotta, Parmesan cheese, and 2-3 tablespoons of the egg whites. Place the remaining egg whites in a separate shallow bowl and set aside.
  3. Assemble the chicken: Oil the bottom of a large baking dish and preheat the oven to 450 degrees. Place one piece of chicken on a flat working surface. Put a spoonful of ricotta-spinach filling right in the middle and roll the chicken up so that the edges meet to form a “seam”. Dip the entire chicken roll in egg whites, and then roll it in the breadcrumbs. Place in a baking dish, seam side down. Repeat for the remaining 7 pieces of chicken. Bake for 25 minutes.
  4. Finishing touches: After 25 minutes, the chicken should be cooked through (white on the inside) and browned on the top. Cover the chicken with the marinara sauce and slices of fresh Mozzarella. Bake for another 3-5 minutes or until cheese is melting. Sprinkle with fresh basil.

Ingredients

  • WET INGREDIENTS
  • 2 large eggs
  • 1 cup mashed bananas
  • 3/4 cup sugar
  • 1/3 cup oil
  • 1/2 cup Greek yogurt
  • DRY INGREDIENTS
  • 1 3/4 cups whole wheat flour
  • 1/4 cup cornstarch or more whole wheat flour
  • 2 teaspoons cinnamon
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon salt
  • FOR THE CRUMB TOPPING
  • 1/2 cup flour plain or whole wheat
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter






Instructions

  1. Heat the oven to 360°F. Grease a 9×5 inch loaf tin.
  2. Whisk together all wet ingredients in a large bowl. Sprinkle flour, cornstarch (OR extra flour), cinnamon, baking powder and salt on top. Gently fold in, do not overmix!
  3. For the crumb topping, place the flour, brown sugar and cinnamon in a medium bowl. Rub in the butter with your fingertips until crumbs form.
  4. Place the batter in the prepared loaf tin and evenly sprinkle with the crumb topping.
  5. Bake for 55-60 minutes, or until a toothpick inserted comes out clean.

Ingredients

  • Sockeye Salmon Poke-
  • 1 pound sockeye salmon, cut into ¾ inch cubes
  • 1/4 cup soy sauce , low sodium, or tamari
  • 1 teaspoon rice wine vinegar, or apple cider vinegar
  • 1 teaspoon sriracha, or chili paste
  • 1 teaspoon sesame oil
  • Pickled Cucumbers-
  • 2 6-inch persian cucumbers, thinly sliced
  • 1/2 cup rice wine vinegar, Kikkoman
  • 1/2 cup water
  • 1/3 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon red chili flakes, dried
  • Sriracha Sauce-
  • 2 tablespoons sriracha
  • 2 tablespoons plain greek yogurt, or light mayonnaise

Instructions

  1. Sockeye Salmon Poke-
  2. In a medium-sized bowl combine diced salmon, soy sauce, vinegar, sriracha and sesame oil. Cover and refrigerate.
  3. Pickled Cucumbers-
  4. Combine vinegar, water, honey, salt and chili flakes in a medium-sized saucepan and bring to a boil over high heat.
  5. Once boiling turn off heat, add cucumber slices and stir.
  6. Let rest 10 minutes, then transfer cucumber to a container, cover and refrigerate until ready to use.
  7. Sriracha Sauce-
  8. In a small bowl whisk together 2 tablespoons sriracha and 2 tablespoons yogurt or mayonnaise.

Ingredients

  • 1 teaspoon cornstarch
  • 1/2 cup low sodium chicken broth (or beef broth)
  • 2 teaspoons olive oil
  • 1 small sweet onion , diced
  • 1 small green bell pepper , diced
  • 1 pound lean ground beef
  • 2 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons taco seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded sharp white cheddar or monterey jack cheese
  • 6 hamburger buns

Instructions

  1. Preheat broiler.
  2. In a small bowl, whisk together the cornstarch and broth. Set aside.
  3. Heat the oil in a large nonstick skillet over medium high. Add the onion and peppers; sauté 3 minutes until tender. Add in the beef and continue to cook, breaking it up and browning, for another 3 minutes. Drain off fat.
  4. Stir in the ketchup, Worcestershire, taco seasoning, salt, and pepper.
  5. Give the broth and cornstarch a quick stir and add it to the skillet; simmer for about 3 minutes, stirring occasionally, until mixture thickens slightly.
  6. Scoop some mixture onto buns, top with 1/4 cup cheese, and stick under the broiler until melted-keep a close eye, so nothing burns! (Alternatively, you can simply add the cheese in with the meat mixture and stir until combined and melted.)
  7. Serve warm with chips and enjoy!
