Ingredients

  • Dressing:
  • 1/4 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 2 tbsp. extra-virgin olive oil
  • 1/4 cup fresh lime juice ((approximately 2 limes)*)
  • 1 tsp. minced garlic ((approximately 2 cloves))
  • 1/4 cup freshly chopped cilantro (packed)
  • Additional Ingredients:
  • 1 lb. wild caught jumbo shrimp (cooked, peeled and deveined, chopped, 16-20 count)
  • 1/2 cup corn
  • 1/2 cup black beans (drained and rinsed)
  • 1 cup cherry tomatoes (halved (approximately 12-14))
  • 1/4 cup sliced red onion (more or less to taste)
  • 1 in large english cucumber (sliced lengthwise and thenhalf (or 2 small seedless cucumbers))
  • 2 avocados (peeled, pitted and chopped)
  • Garnishment:
  • black pepper (to taste)
  • pinch freshly chopped cilantro (aor two will do)
  • Lime juice (optional - to taste)

Instructions

  1. Combine ingredients for the dressing into a small bowl and whisk together until combined.
  2. In a large bowl, combine all ingredients until the 'Additional Ingredients' section, tossing in the chopped shrimp and avocado last.
  3. Add dressing to the shrimp avocado salad, tossing to coat. Serve immediately. This will keep in the fridge for up to 2 days, but is best when freshly made.
  4. Optional: add garnishment, to taste, of additional black pepper, lime juice, and cilantro.

  • 4 oz cream cheese , softened
  • 3 Tbs powdered sugar
  • 10-12 slices bread (any kind)
  • 1 tsp cinnamon
  • ½ cup sugar
  • ½ cup butter , melted

Instructions

  1. Preheat the oven to 350F.
  2. Slice the crusts off the bread
  3. Using a rolling pin, flatten the bread out.
  4. Combine the cream cheese and powdered sugar until smooth.
  5. Lay out 2 shallow dishes (I use pie plates sometimes)
  6. Combine the sugar and cinnamon until well combined and add to one of the shallow dishes.
  7. In the other, add the melted butter.
  8. Spread each slice of bread thickly with the cream cheese mixture.
  9. Roll up tightly, dip in the butter, then the sugar and place on a baking sheet.
  10. Bake for 20 minutes until lightly browned.
  11. Devour.

Ingredients

  • 6 kiwis, peeled and cut in half or quartered
  • 4 kiwis, peeled and sliced - to be used as garnishes
  • 6 ounces of blueberries, to be crushed
  • 6 ounce of blueberries, to be kept whole as garnishes
  • ¼ cup fresh lime juice, from 1-2 limes
  • ~ ½ cup sugar, adjust to taste
  • 4 ounce pack of mint, leaves only
  • 1 ½ - 2 cups of sparkling water
  • 1 to 1 ½ cups of rum, adjust based on your preference
  • Ice as needed
  • Blue and/or green sugar to decorate glass rims

Instructions

  1. Place the cut kiwis in a small food processor with the sugar and lime juice, pulse until you have coarse puree. Mix the kiwi puree with the rum, you can start by adding the lower amount and then adjust as you prepare the drink.
  2. Gently crush the first 6 ounces of blueberries using a muddler.
  3. You can make the mojitos in pitcher or in individual glasses.
  4. Moisten the rims of the glasses with a slice of lime and garnish the rims with the sugar. If you can’t find blue and/or green sugar, you can use blue/green cookie sugar sprinkles.
  5. To make it in a pitcher, pour the kiwi puree into the pitcher, add a layer of ice, add a good amount of mint leaves and kiwi slices. Next add a few more ice cubes, and then add the crushed blueberries, some more mint leaves and whole blueberries. Top off with the sparkling water and mix gently. Taste and add more rum, sparkling water, or sugar if needed.
  6. To make the drink in individual glasses, follow a similar process as for the pitcher, but add a few whole blueberries at the beginning. You can also add a slice of kiwi with the blueberries at the end.

Ingredients

  • 4 chicken breasts boneless, skinless
  • 1 cup Caesar salad dressing (click for homemade recipe)
  • ½ cup sour cream (optional)
  • 1-1½ cup Parmesan cheese grated

Instructions

  1. Heat oven to 375F and spray the inside of an 8" x 11" baking dish with cooking spray.
  2. If the breasts are uneven thickness, pound them (placed in a Ziploc bag and on a flat surface) to an even ¾"-1" thickness using a meat pounder. Sprinkle the breasts (both sides) with grated Parmesan cheese & freshly ground black pepper, and place them in the prepared baking dish.
  3. Whisk together Caesar dressing and sour cream in a small bowl. Pour the Caesar/sour cream mixture over each breasts then sprinkle grated Parmesan cheese on top.
  4. Place the prepared chicken in the oven and bake at 375F for 30 minutes or until a meat thermometer inserted in the thickest part of one of the middle breasts reads 150°F.
  5. Turn the oven to broil and broil the breasts an additional 2-4 minutes or until the chicken turns golden brown. It can burn quickly, so watch it closely. When done, a meat thermometer should register 165F when stuck into the thickest part of one of the middle breasts. Remove from the oven, cover loosely with foil and allow chicken to rest 5-10 minutes before serving.
  6. If desired, garnish with chopped parsley.

Ingredients

  • ½ cup unseasoned wholegrain breadcrumbs
  • 2 tablespoons grated parmesan (or romano) cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon granulated garlic
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 tablespoon olive oil
  • 2lbs chicken cutlets
  • ¾ cup sauce
  • ¾ cup mozzarella cheese

Instructions

  1. Preheat oven to 375 degrees.
  2. In a medium bowl mix together the breadcrumbs, parmesan cheese, granulated garlic, onion powder, salt, and pepper.
  3. Coat a sheet pan with the olive oil.
  4. Dredge each chicken cutlet in the breadcrumb mixture and place on the sheet pan. Discard the rest of the breadcrumb mixture.
  5. Bake the chicken for 15 minutes. Turn over and bake for another 15 minutes.
  6. Remove the pan from the oven and spread 2 tablespoons of sauce and 2 tablespoons of shredded mozzarella cheese on each chicken cutlet.
  7. Place back in the oven and cook for 10 - 15 minutes or until sauce is hot and cheese is melted.
  8. Serve hot.

Ingredients

  • 1 roll of Pillsbury Crescent Rolls
  • FritoS corn chips
  • 1 pound ground beef
  • taco seasoning
  • sour cream
  • shredded cheese
  • black olives Optional)
  • taco topping [lettuce, tomato, avocado]
  • salsa

Instructions

  • 1. Prepare 1 pound of ground beef with taco seasoning according to the package directions. Prep all of your toppings (lettuce, tomato, avocado, etc.) ahead of time.
  • 2. Place all of your crescent roll triangles in a pie dish with the tips in the center and short edges on the outer edge of the dish.
  • 3. Use your fingers to mold the triangles together into a pie crust.
  • 4. Place a couple of handfuls of corn chips (about 1 1/2 cups) on top of the crust.
  • 5. Layer on your seasoned ground beef.
  • 6. Spread on a layer of sour cream with a spoon, and then top with olives (optional). If you like spicy, you could also add in a few jalapeƱos.
  • 7. Top with 1 or more cups of shredded cheese (I used a four cheese blend).
  • 8. Drink a beer (optional).
  • 9. Bake for 20-25 minutes in a 350 degree oven.
  • 10. If you want pretty pie slices, wait about 10 minutes before slicing and serving, otherwise it just kind of falls apart. Top with more Fritos and fresh veggies (lettuce, tomato, avocado, salsa, etc.) and enjoy!

Ingredients

  • 2 cups milk non-fat, reduced fat or whole milk
  • 1 1/3 cups flour
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1 tbsp sugar
  • 1/3 tsp salt
  • butter for greasing the pan

Instructions

  1. Mix well (or blend) all the ingredients together, excluding the butter.
  2. Heat a lightly-buttered frying pan over a medium-high heat.
  3. Pour the batter onto the pan, using about 1/4 of a cup for each scoop.
  4. Tilt the pan and rotate it with a circular motion to help the batter spread evenly.
  5. Cook for about 1 minute per side on medium heat. Repeat until the batter is finished.

Ingredients

  • 1 pound ground beef
  • 1 tsp vegetable oil
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 1 cup beef broth
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • salt and pepper to taste
  • 1 tbsp cornstarch
  • 6 ounces provolone cheese, sliced or in chunks
  • 8 hamburger buns
  • 1 tbsp butter, optional

Instructions

  1. Place a large nonstick pan or cast iron skillet over medium-high heat.
  2. Coat the pan with oil, and add the ground beef.
  3. Stir for 3-5 minutes until the beef is mostly browned. Strain out most of the fat that accumulates.
  4. Add in the onions and bell peppers, and stir for 2-3 minutes until the onions are translucent.
  5. Add in the beef broth followed by the ketchup, Worchester sauce, salt and pepper.
  6. Mix cornstarch with a tablespoon of water in a cup, and add to the pan, stirring constantly as it will start thickening quickly.
  7. Within a few minutes, the mixture should be thick enough to start forming mounds.
  8. Remove from heat, add cheese and slowly stir it in. Meanwhile, start toasting the buns.
  9. Once cheese is fully melted, spoon onto buns. Serve immediately and enjoy!
