Recipes Cookbook - Chocolate Caramel Pecan Turtles Recipe

Ingredients

  • 3 cups whole pecans
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup corn syrup
  • dash salt
  • 7 oz sweetened condensed milk (half of a 14 oz can)
  • 1/2 tsp vanilla
  • 1 1/2 cups chocolate chips (I used milk chocolate chips)
  • 1/2 tsp vegetable oil or shortening






Instructions

  1. Place pecans in a single layer on a baking sheet. Bake at 350° for about 10 minutes or till lightly browned and fragrant. Let cool. Arrange in clusters of 3-4 on silicone liners or parchment paper.
  2. Combine butter, brown sugar, corn syrup, and salt in a 6 quart pot. Bring to a boil over medium heat. Add the sweetened condensed milk and vanilla.
  3. Continue cooking and stirring till mixture reaches 235-240 degrees. I like to use the ice water test, it's more accurate. Drop a small spoonful of the hot caramel into a bowl of ice water. When you take it out, you should be able to roll it into a ball. Then it's done.
  4. Quickly spoon the caramel over the pecan clusters, making sure caramel is touching each of the pecans. Let sit to harden.
  5. Melt the chocolate chips and oil in the microwave at half power, stirring often till smooth. Spoon chocolate on top of each layer of caramel. Let sit for 1-2 hours, or till hardened.

  • 1 green bell pepper chopped
  • 1 red bell pepper chopped

Instructions

  1. Combine all the ingredients in the crockpot.
  2. Cook on low for 6-8 hours.
  3. Shred and chop the chicken.
  4. Stir to combine the flavors.

  • 1 piece of toasted whole grain bread
  • 2 tablespoons of peanut butter You can use any nut butter

  • 1 or 2 teaspoons of ground cinnamon
  • Spicy Mexican Avocado Breakfast Toast
  • 1 piece of toasted whole grain bread
  • 2 to 3 tablespoons of warm vegan refried beans
  • 3 slices of tomato
  • ½ cup of chopped spinach leaves
  • ½ of a thinly sliced avocado
  • A drizzle of sriracha or salsa
  • Banana Chia Chocolate Chip Breakfast Toast
  • 1 piece of toasted whole grain bread
  • ½ of a banana sliced
  • 1 tablespoon of chia seeds
  • 1 tablespoon of mini chocolate chips I use Enjoy Life brand

Instructions

  1. Peanut Butter and Apple Breakfast Toast
  2. Toast the bread, spread the peanut butter on the toast, fan the sliced apples over the top of the peanut butter and press in a bit so they stick, sprinkle the cinnamon over the top. Enjoy!
  3. Spicy Mexican Avocado Breakfast Toast
  4. Toast the bread, spread the warm beans on top of the toast, arrange the tomatoes and press in a bit so they stick, add the spinach, put the avocado on top of the spinach, garnish with a bit of sriracha or salsa if desired.
  5. Banana Chia Chocolate Chip Breakfast Toast
  6. NOTE: If you choose to use a nut butter put that on the toast before the banana.
  7. Toast the bread, slice the banana over the top of the toast and press in a bit, sprinkle the chia seeds and chocolate chips over the banana. Enjoy!

Ingredients

  • 1 pound uncooked medium shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 cup onion chopped
  • 1/2 cup bell pepper chopped
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning or 1 tablespoon chili powder and 1/2 teaspoon EACH garlic powder, onion powder, dried oregano, paprika, ground cumin, salt, black pepper
  • 1-2 cups melting cheese mozzarella, cheddar, Mexican blend or Monterey Jack
  • 6-8 Medium flour tortillas

Instructions

  1. Heat 1 tablespoon oil in a large skillet or pan. Add the chopped onion, bell pepper, and garlic to the pan. Cook for 1 minute or until tender.
  2. Add the shrimp and taco seasoning and cook for another 1-2 minutes or until shrimp begins to turn pink.
  3. Transfer the mixture to a bowl and rinse and whip down the pan with a paper towel. Return the pan to the heat and spray cooking spray or brush with about 1 teaspoon vegetable oil.
  4. Place a tortilla in the pan and sprinkle cheese on one side of the tortilla. Spoon about 5-6 shrimp or enough to cover with another sprinkle of cheese. Fold tortilla in half. Cook for 2-3 minutes on each side or until golden and crispy. Repeat for reaming tortillas.
  5. Serve with Sour cream, salsa, or guacamole.

Ingredients

  • 22 full oreos, no need to separate cookie from filling equals about 2 cups when crushed
  • 1/4 cup white sugar
  • 6 tablespoons butter melted
  • 1 package (8 ounces) cream cheese softened
  • 1 can (14 ounces) sweetened condensed milk
  • 6 milk chocolate flavored hot cocoa mixes with marshmallows
  • 1 container (8 ounces) frozen whipped topping (like cool whip) completely thawed
  • 1/2 cup marshmallow fluff
  • Optional garnish: Reddi Whip Spray

Instructions

  1. In a food processor, process the Oreos until they are crumbs and pour those crumbs into a medium sized bowl.
  2. Melt the butter and mix with Oreo crumbs and sugar. Stir until a sticky dough is formed and then press the Oreo dough into the bottom of a springform pan. Press the crumbs throughout the bottom of the pan and a little up the sides.
  3. In the same bowl (less dishes!) you used to make the crust, put in the cream cheese. Using hand mixers, mix the cream cheese for about 30 seconds to 1 minute. Slowly add in the sweetened condensed milk and continue to mix with the hand mixers for about 3-4 minutes.
  4. Using a spatula scrape down the sides and continue to mix for another minute. Turn off the mixers and pour in one packet of hot chocolate. Stir the hot chocolate until incorporated and then add in the next packet. Repeat this step until all six hot chocolate packets are incorporated in the mixture.
  5. With the spatula, fold in the cool whip until it is completely incorporated. Be careful to not over-mix the cool whip with the rest of the ingredients.
  6. Then mix in the marshmallow fluff so it swirls around with the rest of the ingredients. Barely mix in the fluff so there are marshmallow ribbons throughout the pie.
  7. Pour the mixture into the pan on top of the Oreo crust.
  8. Freeze overnight or for at least 8 hours. Thaw for about 10 minutes before serving and return any leftovers to the freezer after served.

  • 2¼ cups (270 g) unbleached all-purpose flour
  • 2 teaspoons (8 g) baking powder
  • 1 (8 oz or 226 g) package cream cheese, softened
  • ½ cup (1 stick or 113 g) unsalted butter, softened
  • 1½ cups (300 g) granulated sugar
  • 2 tablespoons (12 g) freshly grated lemon zest, from 2 large lemons
  • 1½ tablespoons (22.5 ml) freshly squeezed lemon juice
  • 1 teaspoon (5 ml) pure vanilla extract
  • ⅛ teaspoon (a few drops) lemon oil
  • ⅛ teaspoon natural yellow gel based food coloring
  • 1 teaspoon (4.8 g) fine-grain sea salt, or ¾ teaspoon (4.5 g) regular table salt
  • 1 large egg plus 1 large egg yolk (mine weighed 71 g w/o shells)
  • 1 cup (120 g) confectioners’ sugar, sifted, for rolling & dusting cookies






Instructions

  1. In a medium bowl, whisk together flour and baking powder until well blended. Set aside.
  2. Using an electric stand mixer fitted with paddle attachment, or handheld electric mixer, cream together cream cheese and butter until well blended, creamy and smooth. Beat in sugar, lemon zest and juice, vanilla, lemon oil, food coloring and salt; mix until well combined, light and fluffy, scraping the bowl with a rubber spatula when necessary. Add egg and egg yolk and beat in well until creamy and light, about 1 to 2 minutes on medium speed.
  3. On low speed, gradually add flour mixture and mix until just fully incorporated. Dough will be very sticky. Cover work bowl and refrigerate at least 2 hours or overnight.
  4. Meanwhile, arrange oven rack in lower third of oven and preheat oven to 325ºF (165ºC). Line two baking sheets with parchment paper; set aside. Place confectioners’ sugar in a small bowl; set aside.
  5. Measure enough dough to roll into generous 1-inch (2.5 cm) balls, using a 1 1/3-inch (3.3 cm) spring-loaded cookie scoop (or by measuring a generous tablespoon of dough with a measuring spoon) making sure each scoopful is in equal amounts. This is important for evenly baked cookies.
  6. Roll dough between palms of hands to achieve a small rounded ball and then roll in confectioners’ sugar to lightly coat. Place dough balls on prepared baking sheets at least 2 inches (5 cm) apart.
  7. Bake in preheated oven until cookies have spread into round cookie shapes and are puffed and crackly, about 14 minutes. Do not overbake. The cookies will still be soft in the centers. If they start to brown around the edges, they have baked too long. The underside of the cookies should be only very lightly browned.
  8. Transfer baking sheet to wire rack and allow cookies to cool on baking sheet for at least 10 minutes. Then, carefully remove cookies from baking sheet using a thin metal cookie spatula and transfer to wire rack to cool completely. Once completely cooled, transfer cookies to an airtight container. Repeat with remaining dough on prepared cookie sheets.
  9. If desired, chill the cookies in the refrigerator in an airtight container. Before serving, dust cookies with additional confectioners’ sugar. Serve cookies chilled or at room temperature.

  • Whipped pumpkin butter:
  • ½ c. (1 stick), salted or unsalted butter, room temperature
  • ⅓ c. pumpkin puree
  • 3 tbsp. maple syrup or honey
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • ½ tsp. pumpkin pie spice

Instructions

  1. Set a large non-stick skillet set over medium heat, add a small amount of butter and melt.
  2. In a rectangular baking dish, whisk together the eggs, milk, pumpkin puree, vanilla, cinnamon and pumpkin pie spice.
  3. Dip the bread into the mixture, flip sides and then place on the hot skillet. Cook until each side is golden brown, about 2-3 minutes on each side. Repeat with remaining ingredients, serve hot with whipped pumpkin butter, maple syrup and toasted chopped nuts (if desired).
  4. To make the pumpkin butter, in a small mixing bowl, add the softened butter and beat with a hand mixer for 2 minutes or until light and fluffy. Add the pumpkin puree, maple syrup or honey, vanilla, cinnamon and pumpkin pie spice. Beat for an additional minute or until fluffy. Store in an air-tight container in the refrigerator for up to 5 days.

  • 1 and half pounds boneless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 can 20 oz. sliced pineapple save the juice for the sauce
  • 1 tablespoon cornstarch
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 garlic cloves minced
  • 4 servings of cooked rice.

Instructions

  1. Season chicken with thyme, salt and pepper.
  2. Over medium heat brown the chicken in the vegetable oil.
  3. Drain pineapple slices and reserve the juice.
  4. Combine cornstarch and 2 oz. of the pineapple juice and set aside.
  5. In a separate bowl combine remaining juice with mustard, honey, and garlic.
  6. Add dijon mixture to the pan, reduce heat and cover.
  7. Allow to simmer for 15 minutes.
  8. Remove chicken from the pan.
  9. Stir the cornstarch mixture and add to the pan and bring to a boil.
  10. Stir for 2 minutes.
  11. Reduce heat and return chicken to the pan. Flip chicken in the pan to get it nice and coated with the sauce.
  12. Add pineapple slices to pan (on top of chicken and around the chicken) cover for 2-3 minutes to allow pineapple to heat through.
  13. Serve over rice..

  7. Cook for 2 minutes on the other side or until lightly browned.

  • 1.5 pounds boneless skinless chicken thighs
  • 20-22 mini white corn tortillas , warmed on a skillet*
  • Pico de gallo
  • 1 /2 cup fresh cilantro , chopped
  • fresh lime juice
  • hot sauce , optional (our favorite for Mexican food is Valentina)
  • sour cream , optional
  • For the Marinade:
  • 4 Tablespoons orange juice
  • 2 Tablespoons apple cider vinegar
  • 1½ Tablespoons lime juice
  • 3 cloves garlic , minced
  • 1½ Tablespoons ancho chili powder or chipotle chili powder
  • 2 teaspoons dried oregano leaves
  • 2 teaspoons paprika
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon salt
  • freshly ground black pepper

Instructions

  1. Make chicken marinade by combining all marinade ingredients in a large ziplock bag. Add chicken thighs.
  2. Refrigerate for at least 1 hour or up to overnight.
  3. Preheat grill over medium-hight heat. Oil the grill with canola oil or spray generously with cooking spray. Remove chicken with marinade and place on hot grill.
  4. Cook for about 4-5 minutes on each side, flipping once (thickest part of the chicken thigh should register about 165 degrees).
  5. Transfer to a plate and allow to rest for a few minutes before chopping into small pieces.
  6. Layer two warmed mini corn tortillas together. Top with chopped chicken, pico de gallo, cilantro, hot sauce, and sour cream (optional). Spritz with a little bit of lime juice. Serve immediately.
  7. Serve with a side of Mexican Rice or another Mexican side dish.

  • CHOCOLATE CAKE
  • 2 cups (260g) flour
  • 2 cups (414g) sugar
  • 3/4 cup (70g) Hershey’s Special Dark Cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 1 cup (240ml) vegetable oil
  • 1 tsp vanilla
  • 1 cup (240ml) boiling water
  • CARAMEL SAUCE AND ICING
  • 1 1/2 cups (310g) sugar
  • 9 tbsp (126g) salted butter, cubed, room temperature
  • 3/4 cup (180ml) heavy whipping cream, room temperature
  • 4 cups (460g) powdered sugar
  • 2–3 tbsp (30-45ml) milk
  • CHOCOLATE GANACHE
  • 9 oz semi-sweet chocolate chips
  • 3/4 cup (180ml) heavy whipping cream
  • ADDITIONAL
  • 3/4 cup chopped pecans

Instructions

  1. TO MAKE THE CHOCOLATE CAKE LAYERS:
  2. 1. Prepare three 8 inch cake pans with parchment paper circles in the bottom, and grease the sides. Preheat oven to 300°F (148°C).
  3. 2. Add all dry ingredients to a large bowl and combine.
  4. 3. Add eggs, buttermilk, vegetable oil and vanilla to the dry ingredients and mix well.
  5. 4. Slowly add water. Mix well.
  6. 5. Divide batter evenly between cakes pans and bake for about 30-33 minutes, or until a toothpick comes out with a few crumbs.
  7. 6. Remove cakes from oven and allow to cool for about 10 minutes, then remove to cooling racks to cool completely.
  8. WHILE CAKES COOL, MAKE THE CARAMEL SAUCE AND ICING:
  9. 7. Pour sugar into an even layer in a large saucepan.
  10. 8. Heat on medium-high heat, whisking the sugar until melted. The sugar will clump up first, but will eventually completely melt. This will take about 10 minutes.
  11. 9. Once the sugar has melted, stop whisking and allow to cook until the sugar has turned to a little darker amber color. You may notice a nutty aroma. The change in color will happen quickly, so don’t let it go too long or get too dark or it’ll burn. Remove caramel from the heat.
  12. 10. Add butter and whisk until combined. The mixture will bubble up, but keep whisking until all the butter has melted and combined.
  13. 11. Slowly pour the heavy cream into the caramel and whisk until incorporated.
  14. 12. Cool for about 10-15 minutes before using.
  15. 13. Set aside about 1/3 cup of caramel sauce, then transfer remaining caramel sauce to a mixing bowl.
  16. 14. Slowly add powdered sugar and milk and mix until smooth. You can add more or less milk to get the right consistency for the icing. For help with getting the right consistency, check out this post.
  17. TO PUT CAKE TOGETHER:
  18. 15. Make the ganache by adding the chocolate chips to a metal or glass bowl (see my tips on making chocolate ganache).
  19. 16. Microwave the heavy whipping cream until boiling, then pour over the chocolate chips. Cover bowl with clear wrap for about 5 minutes.
  20. 17. Whisk chocolate until smooth. Microwave in 5-10 second increments as needed, if chocolate isn’t fully smooth and melted.
  21. 18. When the cakes are cool, remove the tops of the cakes with a large serrated knife so they are flat. See my tips on how to level a cake and how to stack a cake.
  22. 16. Place the first layer of cake on cake stand. Top with 1 cup of the caramel icing and spread into an even layer. Top icing with about 1/4 cup of chopped pecans, then drizzle with some chocolate ganache and caramel sauce.
  23. 17. Add second layer of cake and icing and add another 1/4 cup of chopped pecans, caramel sauce and chocolate ganache.
  24. 18. Top cake with remaining cake layer.
  25. 19. Pour remaining ganache over the cake and allow it to drizzle down the sides of the cake. Refrigerate until the ganache is firm.
  26. 20. There should have been a little caramel icing left. Use that to pipe caramel icing around the top edges of the cake, then sprinkle with remaining chopped pecans and drizzle with caramel sauce.

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup dark unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp granulated white sugar
  • 1 cup buttermilk
  • 1 large egg
  • 3 tbsp melted butter
  • 6 oreos finely crushed (I pulsed mine in a food processor)
  • For the cream
  • 2 cups cold heavy cream
  • 1/4 cup granulated white sugar
  • 2 oreos finely crushed
  • chocolate syrup for drizzling (see note)

Instructions

  1. In a large bowl, add flour, cocoa powder, baking powder, baking soda, salt and sugar. Whisk together. Add in egg, buttermilk and butter. Whisk a few times until batter comes together, but a few lumps still remain. You don't want to overmix pancake batter. Gently stir in crushed Oreos. Let batter sit a few minutes to thicken.
  2. Grease your skillet and bring to medium heat. Measure out 1/4 cup of batter. Pour batter into middle of skillet, using a spatula to help scrape out batter from measuring cup as it will be quite thick. Cook pancake until bubbles begin to break the surface, then flip to other side and cook until pancake is done. Repeat with remaining batter. You should have enough batter for about 10 pancakes.
  3. To make cream, pour heavy cream and sugar into a large mixing bowl of a stand mixer. Mix on high speed with a wire whisk until cream becomes stiff peaks. Using a 1M star tip, pipe cream on top of one of the pancakes. I piped a thick outer circle and then less in the middle as I didn't want the pancakes to be overwhelmed with cream. Sprinkle some crushed Oreos over cream (you can also mix the Oreos into your cream but I want to keep the cream white to look more like Oreo cookies). Gently place a pancake on top. Repeat with cream, crushed Oreos and pancakes. I made two stacks of five. Serve immediately with chocolate syrup.

  • 2 tbsp olive oil divided
  • 1 red bell pepper cut into 1 inch cubes or strips
  • 1 green bell pepper cut into 1 inch cubes or strips
  • 8 ounce 8 ounce flank steak sliced in strips against the grain
  • 3 garlic cloves minced
  • 1/4 cup brown sugar packed
  • 1/2 cup soy sauce low sodium
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 1 tbsp cornstarch

Instructions

  1. In a medium sized skillet or wok over medium high heat add 1 tablespoon olive oil. Add the bell peppers and cook 1-2 minutes until tender. Remove and set aside on a plate.
  2. Turn the heat to high and add the flank steak and cook on each side to sear the beef and reduce heat to medium high and continue to cook until no longer pink and brown on each side.
  3. In a small bowl, whisk the garlic, brown sugar, soy sauce, sesame oil, ginger and cornstarch.
  4. Add the peppers back to the skillet and add the sauce. Let simmer for 1-2 minutes until the sauce starts to thicken. Serve over rice.

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 1 cup + 2 tablespoons light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 large eggs, at room temperature
  • 1 cup white chocolate chips
  • 1 cup peanut butter chips
  • 1/2 cup Reese's Pieces (I used the minis but full-sized are OK, too)

Instructions

  1. Preheat oven to 375 degrees (F). Line 2 large baking sheets with parchment paper and set aside. In a medium sized bowl whisk together the flour, baking soda, and sea salt; set aside.
  2. Add the sugars, vanilla, and butter to a large bowl and whisk until light and fluffy; about 2 minutes (I recommend using a stand mixer/ handheld mixer to help here, if you have one). Add the eggs and beat quickly – for only about 30 seconds – until they’re just combined. Let the mixture rest for 5 minutes, then beat the eggs for another 30 seconds. Gently fold in the flour mixture with a rubber spatula, stirring only until the flour begins to disappear. Fold in white chocolate, peanut butter chips, and Reese's Pieces.
  3. Roll 3 tablespoon sized balls of dough between your palms to form a ball (they should be big; almost a 1/4 cup), then place on prepared sheet (make sure to leave enough room in between each cookie for inevitable spreading). Continue this process until all the dough has been rolled. Place baking sheets in preheated oven and bake for 11 minutes, or until golden at the edges but still soft in the middle. Let cookies cool for 5 minutes on the sheet before transferring to a wire wrack to cool completely.

Instructions

  1. Preheat oven to 350 degrees F. Line 2 muffin pans with about 18 paper liners; set aside.
  2. In a large bowl, combine the cake mix, eggs, oil, vanilla creme soda, brown sugar and dry pudding mix. Beat with an electric mixer for about 2 minutes or until combined. Portion the batter evenly among the muffin cups, filling about ¾ full.
  3. Bake the cupcakes for approx. 15-17 minutes or until a toothpick inserted near the center comes out clean or with moist, not wet, crumbs. Cool completely.
  4. In the bowl of a stand mixer, combine the butter, butterscotch sauce, brown sugar, butter and vanilla extracts with the paddle attachment until creamy, about 30 seconds. Add in the powdered sugar, one cup at a time, until frosting is light and fluffy, streaming in the heavy cream if needed (if frosting is too thick).
  5. Pipe the frosting onto the cooled cupcakes. If piping the frosting as high as in my photos, you may want to double the recipe. Drizzle with caramel or butterscotch sauce.

  • 2 pounds skinless, boneless chicken breasts (fresh or frozen)
  • 1 packet taco seasoning mix (I use low sodium)
  • 1 16 oz jar salsa (use your favorite; I used a local Texas brand)
  • 1/3 cup chopped fresh cilantro
  • juice from two limes

Instructions

  1. Place chicken breasts in the bottom of your slow cooker. Sprinkle taco seasoning over the top, then cover with salsa, lime juice, and cilantro.
  2. Place lid on top and cook for four hours on high, or 6-7 hours on low. Remove chicken from crockpot to a separate bowl and shred with two forks. Moisten chicken with small amounts of juice left over from the crockpot until you get the amount of moisture that you like. I used about 1/2 - 3/4 cup juice.
  3. Serve with taco shells or tortillas, adding on your favorite toppings. I like to use shredded lettuce, diced tomatoes, diced avocado, cheese, sour cream, and even a drizzle of ranch dressing. Enjoy!

Instructions

  1. Preheat the oven to 400ºF. Place sweet potatoes on a baking sheet and prick with a fork. Place in the oven and bake for 40 minutes.
  2. Meanwhile, heat the oil in a large skillet. Add the onion and pepper and saute until tender, about 5 minutes.
  3. Add corn, quinoa, black beans and spices and cook 2 - 3 more minutes.
  4. When sweet potatoes are fork tender, remove from oven and let rest for 5 minutes. Slice in half and place each half on a plate. Top with quinoa mixture, avocado and a drizzle of both tahini and hot sauce. Finish with a sprinkle of cilantro and enjoy!

  • 12 ounces spaghetti, fettuccine, or linguine noodles
  • 1/2 cup soy sauce
  • 1 tablespoon sesame oil

  • 1/3 cup cold water

Instructions


  1. Cook noodles according to package's instructions. Drain and set aside.
  2. In a large skillet whisk together soy sauce, sesame oil, rice vinegar, sugar, and chili paste and bring to a boil.
  3. In a small bowl whisk together cold water and corn starch. Stir into skillet and bring back to a boil, then reduce to medium low heat.
  4. Stir noodles, peanuts, and green onions into the sauce. Serve immediately.

Ingredients

  • 1 lb bag dry navy beansor other white beans of choice, soaked for several hours* (see notes)
  • 1-2 tbsp olive oil
  • 14 oz smoked turkey sausage sliced into medallions
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 3 carrots peeled and chopped
  • 2 stalks celery chopped
  • 1 tsp fresh thymechopped
  • 2 tsp fresh rosemarychopped
  • 7 cups vegetable broth
  • 3 cups fresh baby spinach
  • 1 tsp salt (plus more to taste)
  • 1/4 tsp black pepper

Instructions

  1. Using the saute function, add olive oil and cook sausage until browned.
  2. Add onions and saute until translucent. Add garlic and saute for one minute. Turn saute off.
  3. Rinse the beans and add them to the pot, along with all remaining ingredients.
  4. Set to pressure cook (manual) on high for 20 minutes.
  5. When finished, quick release the steam valve.
  6. Open and season with additional salt and/or pepper to taste.
  7. To thicken the soup, use a wooden spoon to smash some of the beans against the side of the pot.
  8. Serve with warm, crusty bread.

  • 1/2 cup unsalted butter-melted and slightly cooled
  • 2 cups milk-lukewarm
  • 1 and 1/4 cups (150 g) powdered sugar
  • 4 eggs-separated
  • 1 Tablespoon water
  • 1 cup (115g) flour
  • 2 teaspoon vanilla extract
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 325°F
  2. Lightly grease 8×8 inch baking dish, set aside
  3. Whip the egg whites until stiff peaks form, set aside.
  4. Beat the egg yolks and powdered sugar until pale yellow.
  5. Mix in melted butter and the tablespoon of water (for about 2 minutes) until evenly combined.
  6. Mix in the flour until evenly incorporated.
  7. Slowly beat in the milk and vanilla extract until well combined.
  8. Fold in the egg whites (1/3 at a time, then repeat until all of the egg whites are folded in).
  9. Pour the batter into the pan and bake for 40-60 minutes (until the cake is barely jiggly in the center). Baking time might vary depending on your oven or pan you use, but start checking after 40 minutes. If the top browns too quick before the minimum of 40 minutes, you can cover the cake with aluminum foil.
  10. Cool the cake completely before dusting with powdered sugar. Even cooled, it will be slightly jiggly because it has custard layer in the center.

  • 8 slices of bacon, fried crispy
  • 1 large head cauliflower, cut into florets
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon ranch seasoning
  • ¼ teaspoon black pepper
  • 1 cup shredded colby & monterey jack cheese
  • 1 cup sharp cheddar cheese
  • 6 tablespoons chopped fresh chives, divided

Instructions

  1. Preheat oven to 370 degrees. Spray a 11×7 (you can also use 13×9) baking dish with non-stick cooking spray.
  2. Fry bacon in a large skillet until crispy and crumble. Set aside.
  3. Steam cauliflower until tender, about 15 to 20 minutes.
  4. Combine your sour cream, mayonnaise, ranch seasoning, black pepper in a large bowl. Add the steamed cauliflower florets, 1/2 of the bacon, 1 cup sharp cheddar cheese and 3 tablespoons chives; mix well. Transfer mixture to the prepared baking dish and top with your colby & monterey jack cheese and the other half of the bacon.
  5. Cover dish with foil and bake for 20 minutes. Remove foil and bake another 5-10 minutes or just until cheese is bubbly and beginning to brown. Garnish casserole with remaining chives.

  • 3 tablespoons butter
  • 2 pounds chuck roast, trimmed+ cubed (or stew meat works too)
  • 2 tablespoons all-purpose flour
  • 1 onion, diced
  • 8 ounces baby Bella mushrooms, cut into thick slices
  • 1 ½ teaspoon EACH: garlic powder AND sugar
  • 1 teaspoon EACH: onion powder, dried thyme, AND mushroom powder
  • 1 tablespoon Worcestershire sauce
  • 1 large bay leaf
  • ½ cup pepperoncini peppers, thinly sliced
  • 1 ½ – 2 cups low sodium beef stock (see directions)
  • 2 tablespoons cornstarch (mixed with a few tablespoons of water)

Instructions

  1. SEAR: Season the beef with the flour, a big pinch of salt and pepper; mix well. Heat the butter in the instant pot on the sauté setting or a cast iron skillet over medium-high heat. When it melts sear the beef in batches to form a brown crust, remove to a plate, and continue searing the remaining beef. Add the onions and switch to a wooden spoon. Sauté them for 1 minute, scraping the bottom of the pot to make sure no brown bits are left stuck on.
  2. SLOW COOKER: Place 2 cups of beef stock along with the remaining ingredients in the slow cooker (except the corn starch) and cook on high for 3-4 hours or low for 5-7 hours. 35 minutes before the cooking time is up, combine ½ cup of the liquid from the slow cooker and the cornstarch in a small bowl, whisk until smooth. Add to the slow cooker and allow for the food to cook for the remaining 30 minutes. If the gravy is too thick, add a few tablespoons of water to thin it to your desired consistency. If you still find your gravy is thin, add more cornstarch mixed with a tablespoon of water. Adjust salt and pepper to preference and serve over rice/mashed potatoes/cauliflower mash, etc.
  3. OR INSTANT POT:  Place 1 ½ cups of beef stock along with the remaining ingredients in the instant pot (except the cornstarch) and select the meat/stew setting. Cook on manual high pressure for 35 minutes. Once the stew is cooked allow natural pressure release for 10-15 minutes. This gives the meat a chance to really soak up all those flavors. Click the ‘sauté’ setting. Dissolve the cornstarch with 2-3 tablespoons of water and add that to the instant pot once the liquid starts bubbling. Allow the sauce to thicken, about 1-2 minutes, stir to combine. If the gravy becomes too thick, you can add a couple more tablespoons of water to thin it to your desired consistency. Adjust salt and pepper to preference and serve over mashed cauliflower, mashed potatoes, rice, or egg noodles.

  1. Preheat your oven to 350.
  2. The assembly. First things first, this recipe calls for a specific brand of low carb granola. Lolli’s low carb granola is my absolute favorite. It has one net carb per serving, super simply, clean ingredients and is pretty unbelievably delicious. I will link to her store here! You can save 10% off your order with the code “KETOCOPY”. I absolutely love this product and am proud and thrilled to be working with them. There is a Lolli! She’s real, and she’s lovely. :) If you do not have this granola and NEED to make this recipe immediately, simply double all of the other filling ingredients. It may not have quite the same pizazz but I’m pretty sure that will work. Lolli’s granola is sweetened with Sukrin Gold and imparts an absolutely delicious brown sugar flavor.
  3. Melt 8 oz. of shredded mozzarella in a microwave safe bowl in short bursts in your microwave. I usually microwave for 30 seconds, stir, 30 seconds, stir, 15 seconds. If you have never made fathead dough before, check out my recipe post here. There is a much longer explanation of the process, the cheese selection, the whole deal.
  4. Once your cheese is melted, stir in your egg. Don’t worry, the cheese will not cook your egg. Once well mixed, add your dry ingredients. I like to stir all of my dry ingredients together before I add them to my cheese and egg mixture. I added a dash of cinnamon to this specific batch of dough and it was nice. Fathead type dough is easy to nudge in any direction with different seasonings.
  5. After you have mixed your dry ingredients into your wet ingredients, you will need to knead the dough for a minute or two to incorporate it completely.
  6. Roll out dough into a long rectangle and pile your filling center, across the entire long length of your dough. Imagine the rectangle is divided into thirds. Spread the filling down the center third leaving a third on either side of the filling to cut your strips. You can also lightly score this imaginary line and cut your strips before adding the filling.
  7. Cut your strips from the edge of the center third out to the outside of your dough, at an angle. I find it works better to press down into the dough with the knife rather than dragging a knife through the dough. You can also use a pastry scraper to cut the strips. Before I go into all this….. if making fancy lattice pastries isn’t your thing, I don’t blame you. It’s entirely possible to get this all together much quicker, albeit less fancy :), if you skip the lattice.
  8. You can fold the left and then the right side over the center intact, OR, you can make this like a giant danish pocket. To do that simple pile the filling along one side and fold the other side over. you may want to run a bit of egg wash along the inside edge of your “Danish pocket” before folding over and sealing shut :) If you go this route make sure to cut slits on the top of the danish to allow steam to escape. There probably won’t be a lot of moisture in the filling, but it’s a quick, easy way to add a bit of fancy
  9. Ok! Strips….. if you’d like a lattice top on your danish, simply cut strips at a slight angle all along those outer third sections of your pastry. Alternating left and right, fold the strips over the filled center. This may feel super weird the first time you do it but you’ll quickly get the hang of it. You can always un-fold them and start over too.

  • 1 avocado halved and pitted
  • 1 4.5 oz can tuna, drained
  • ¼ cup diced red bell pepper
  • 1 tablespoons minced jalapeno
  • 1/4 cup cilantro leaves roughly chopped
  • 1 tablespoon lime juice
  • salt and pepper to taste

Instructions

  1. Scoop out some of the avocado from the pitted area to widen the "bowl" area. Place the scooped avocado into a medium-size mixing bowl. Mash it with a fork.
  2. Add the tuna, bell pepper, jalapeno, and cilantro to the mixing bowl. Pour lime juice over. Stir it all together until everything is well mixed.
  3. Scoop the tuna into the avocado bowls. Season with salt and pepper.

  • Yeast Mixture:
  • 1/4 cup warm water
  • 1 packet (2 1/4 tsp) instant yeast
  • 2 Tbsp granulated sugar
  • Milk Mixture:
  • 1 cup milk
  • 3/4 tsp salt
  • 1/4 cup granulated sugar
  • 4 Tbsp (1/2 stick) unsalted butter
  • Dough:
  • 1 large egg, beaten
  • 1/3 cup potato flakes
  • 1/3 cup HOT water
  • 4 cups (+) all-purpose flour
  • Orange Filling:
  • 3 Tbsp unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 tsp ground ginger
  • 2 tsp orange zest
  • 1/4 cup freshly squeezed orange juice
  • Orange Cream Cheese Glaze:
  • 4 oz (1/2 bar) cream cheese
  • 1 cup powdered sugar
  • 2 tsp orange zest
  • 2 Tbsp freshly squeezed orange juice

Instructions

  • YEAST MIXTURE: Dissolve yeast and sugar in warm water. Stir and set aside.
  • MILK MIXTURE: Scald milk on the stove or in the microwave. Add salt, sugar, and butter. Whisk until dissolved. Let cool.
  • DOUGH: Combine potato flakes with the hot water. Should be smooth, but thick. Add a little extra water, if needed. Set aside.
  • Beat egg and place in a stand mixer with the dough hook attachment. Add yeast mixture, milk mixture, and mashed potatoes. Gradually add flour. It will be a sticky dough, so don't add too much more than the 4 cups of flour, but make sure that when it kneads it is moving around well. Knead 5-10 minutes.
  • Empty the sticky dough into a greased bowl. Cover with a towel and let rest for 1 hour.
  • ORANGE FILLING: While dough is rising combine the sugar, ginger, and orange zest in a bowl so the zest has a chance to flavor the sugar. Once the dough has risen, add just enough orange juice to the sugar mixture form a thick clumpy mixture like wet sand. (About ¼ cup orange juice.)
  • Empty rested dough onto a floured surface. Sprinkle top with flour and pat dough flat. Using a floured rolling pin, roll dough into a rectangle, lifting the dough periodically to make sure it is not sticking to the countertop; dust with flour as necessary. Roll dough 1/2-inch thick; about 10x15-inches.
  • Spread the dough evenly with 3 Tbsp of very soft, unsalted butter. Then spread the orange/sugar mixture over the top. Roll the dough up tightly, starting from the top, long edge to the bottom, long edge. Stretch and pull the dough taut as you roll, to keep the orange-sugar firm inside.
  • Cut 12 rolls using floss or string. Place onto a greased baking sheet with ends inward to help keep from unrolling once they raise. Cover the rolls with a towel (I like to use a LIGHTLY damp towel) and let raise for another 30-60 minutes or until puffy and nearly doubled.
  • Heat oven to 350 degrees Fahrenheit. Place risen rolls in the oven and bake for 20-25 minutes or until a thermometer inserted into a center roll reads 190 degrees Fahrenheit. (You may also check doneness by pressing the center -- if it springs back, it's done.)
  • While rolls are baking prepare the GLAZE. In a medium-sized bowl, use a hand mixer to beat the cream cheese until light and fluffy. Add the powdered sugar, zest, and 2 Tbsp of orange juice. Blend until smooth and creamy. Top warm rolls with glaze. Serve while still warm.

  2. Pour ground beef mixture into the slow cooker. Add the tomato sauce, diced tomatoes, beans, and seasonings to the crockpot. Stir. Cook on low for 6-8 hours or high for 4-5 hours.
  3. Right before serving, stir one cup of the cheese into the chili. Top with remaining cheese and Fritos.
  4. Serve with more chips, sour cream, letttuce, tomato as desired.

  • 1 yellow onion chopped
  • 1/2 green bell pepper chopped finely

Ingredients

  • 1 small head of cauliflower cut into bite sized florets
  • 2 cups panko bread crumbs (see note)
  • cooking oil spray
  • 2 large eggs whisked
  • 2 scallions finely sliced
  • for the sauce (see note)
  • 6 tbsp honey
  • 4 garlic cloves minced
  • 1 tsp onion powder
  • 6 tbsp water + 2 tsp cornstarch
  • 1 1/2 tbsp low sodium soy sauce
  • 1/2 tbsp sriracha sauce






Instructions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper. Spread panko crumbs in a thin even layer across the surface of the baking sheet. Spray panko crumbs with cooking oil spray. Bake crumbs about 5-7 minutes or until golden brown.
  2. Set whisked eggs aside in a small bowl. Line another large baking sheet with parchment paper.
  3. Dip cauliflower in egg mixture and then shake a few times so that excess egg drips off. You don't want to dampen your breadcrumbs with excess egg because then they won't stick to the cauliflower. Then place into sheet with panko crumbs. Cover cauliflower with panko, pressing the crumbs gently against the cauliflower to help them stick. Place coated cauliflower on empty prepared baking sheet. Repeat until all cauliflower is coated.
  4. Bake for about 15-20 minutes or until cauliflower is cooked and the coating is a dark golden brown.
  5. While the cauliflower is cooking, make sauce on the stove. In a small bowl, completely dissolve cornstarch in water and set aside.
  6. Add all sauce ingredients except the cornstarch + water to a small pot or saucepan. Bring to a gentle simmer and stir a few times until ingredients are mixed. This should only take a few seconds. Then add cornstarch water to the sauce. Stir immediately to dissolve cornstarch into the sauce. Stir occasionally and let sauce come to a simmer (make sure to stir otherwise the cornstarch will clump up) and cook until sauce starts to thicken (about 2 minutes).
  7. Allow sauce to cool a few minutes and thicken even more. Drizzle over cauliflower. If you wish to completely coat cauliflower in sauce, it's best to double the sauce and brush it on with a pastry brush. Garnish with scallions.

  • 2 tubes (8 oz each) refrigerated crescent rolls
  • 1 package (8 oz) cream cheese, softened
  • 1 cup (8 oz) sour cream
  • 1 pound ground beef or ground turkey
  • 1–2 envelopes or 2–4 Tbsp taco seasoning, to taste
  • 1 medium tomato, chopped
  • 2 cups shredded Mexican cheese
  • 1 cup shredded lettuce
  • optional: avocado, taco sauce, hot sauce, black beans

Instructions

  1. Preheat the oven to 375 degrees.
  2. Unroll the crescent roll dough and lay out on a large ungreased cookie sheet. Pinch the perforations together to seal. Bake at 375 for 8-10 minutes or until light golden brown.
  3. While the crescent rolls are baking, mix the softened cream cheese and sour cream together. Remove any lumps with a whisk. Set aside.
  4. Brown the ground beef and drain. Add a can of drained black beans, optional, for more protein if desired. Add the taco seasoning and 1/4 cups of water. Simmer for 3-5 minutes, stirring occasionally.
  5. When the crescent roll pizza crust is finished baking, remove from the oven and set aside to cool for 3-5 minutes. Spread the sour cream / cream cheese mixture over the crescent rolls. Sprinkle the ground beef mixture evenly over the top, followed by lettuce, tomatoes, cheese, and any other desired toppings.
  6. Cut into serving-size pieces and serve immediately or store in the refrigerator for cold taco pizza to be served later.

Ingredients

  • 2 - 2 1/2 lbs boneless chuck roast, trimmed andcut into 1-2 inch pieces
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 Tbsp vegetable oil
  • 12 oz dark stout beer (I usually use Guinness)
  • 3 cups beef broth
  • 3 carrots, peeled and cut into 2 inch pieces
  • 2 parsnips, peeled and cut into 1 inch pieces
  • 1 1/4 lb baby Yukon gold potatoes, halved or quartered
  • 1 yellow onion, diced
  • 5 cloves garlic, minced
  • 2 tsp fresh sage, minced
  • 2 Tbsp beef base (better than bouillon)
  • 2 Tbsp tomato paste
  • 1-2 Tbsp prepared horseradish
  • 1 Tbsp softened butter
  • 1 Tbsp all purpose flour

Instructions

  1. Season beef pieces with 1 1/2 tsp kosher salt and 1 tsp black pepper.  Heat vegetable oil in a large skillet over MED-HIGH heat until shimmering, then add beef in a single layer (you may have to do this in batches to avoid overcrowding the pan).  Brown on all sides, about 1-2 minutes per side, then turn off heat.  Remove beef to slow cooker.
  2. Pour beer and broth into hot pan and stir to loosen any browned bits.  Let sit for a few minutes while you add other ingredients.
  3. Add carrots, parsnips, potatoes, onion, garlic, sage, beef base and tomato paste to slow cooker with the browned beef.  Pour beer/broth mixture from the skillet into the slow cooker.  Cover and cook on LOW for 7 - 7 1/2 hours.
  4. Mix together butter and flour to form a pasty ball.  Remove lid, add horseradish and butter/flour mixture, stirring well.  Cover and continue cooking another 20-30 minutes, stirring occasionally.  Taste, and add additional salt and pepper as needed.
  5. Sprinkle with fresh parsley and serve!

  • 12 ounces fresh Mexican Chorizo, casings removed
  • Queso (Homemade recipe here)
  • 6 Burrito size tortillas
  • 1 green poblano pepper, diced
  • 1 small yellow onion, diced
  • 1 tablespoon fresh cilantro, diced
  • 6-8 small red potatoes
  • 1 tablespoon oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse potatoes and pierce them with a fork. Place on a microwave safe plate and microwave for about 5 minutes to get the cooking process going. Alternatively, you could place them in a saucepan, cover with water, and bring to a boil, then cover and remove from heat and let stand for about 5 minutes. Once the potatoes are partially cooked, cut them into small cubes.
  2. In a large skillet, begin browning the chorizo and breaking it up. After cooking the chorizo a few minutes, add in the diced poblano pepper, and diced onion. Continue cooking until the chorizo is cooked through and the peppers and onions are tender. Remove the chorizo, peppers and onions from the pan.
  3. Adjust the heat to medium-high and add 1 tablespoon of oil to the pan. When the oil is hot, add in the diced potatoes, salt and pepper. When the potatoes are lightly browned and completely cooked (about 8-10 minutes), add in the chorizo mixture. Stir in cilantro. Remove the chorizo/potato mixture from pan and wipe it out with a paper towel.
  4. Adjust the heat on the skillet to medium-low and heat the tortillas, one at a time, for about 20 seconds per side. Using a skillet to heat the tortillas has always provided better results than microwaving.
  5. Begin filling the burritos with about 3/4 cup of the chorizo/potato mixture. Top with homemade warm queso, and then roll-up. If you’d like, cut each burrito in half on a diagonal. This recipe yields at least 6 burritos, possibly more depending on how full you fill each one.

  • 3 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda

  • 10 tbsp butter, softened

  • 1 tsp vanilla extract
  • 1 cup plain greek yogurt
  • 1/2 cup sour cream
  • 2 cups finely grated carrots
  • 1 cup chopped walnuts, toasted
  • *For the Glaze
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 3 tbsp (or more) milk

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a muffin tin with paper cups, spacing the cups out so they aren’t next to each other then grease the outer edge with cooking spray or butter. Set aside.
  3. In a large bowl whisk together to flour, baking powder, baking soda, salt, and allspice.
  4. In another large mixing bowl cream the butter and sugar until light and fluffy. Add the eggs one at a time, scraping the sides if necessary. Add the vanilla and beat until smooth.
  5. Alternately add the flour, greek yogurt, and sour cream to the butter mixture, scraping the sides of the bowl occasionally, and ending with the flour mixture. Don’t over mix, the batter should be slightly lumpy. Work in the carrots and toasted walnuts until evenly distributed.
  6. Use an ice cream scooper to fill the muffin cups, piling it up about a 1/2 inch above the rim of the cups.
  7. Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  8. Meanwhile beat the cream cheese with the paddle attachment for 4 to 5 minutes or until light and fluffy. Add the powdered sugar and milk and beat on medium speed until smooth. Add more milk if you want a thinner consistency.
  9. Drizzle the tops of the muffins with the glaze and enjoy!!

  • 1 tablespoon butter
  • 1 small onion diced
  • 2 stalks celery diced
  • 2/3 cup frozen peas defrosted
  • 1 can tuna 5-6 oz, drained
  • 10.5 oz condensed mushroom soup
  • 1/3 cup milk
  • 1 cup cheddar cheese
  • 1 tablespoon parsley
  • Crumb Topping
  • 1/2 cup panko bread crumbs
  • 1 tablespoon butter melted
  • 1/2 cup cheddar
  • 1 tablespoon parsley

Instructions

  1. Preheat oven to 425°F. Combine topping ingredients and set aside.
  2. Boil noodles al dente according to package directions. Drain and rinse under cold water.
  3. Cook onion and celery in butter until tender, about 5-7 minutes.
  4. In a large bowl combine noodles, onion mixture, peas, soup, milk, cheese, tuna and parsley. Mix well.
  5. Spread into a 2qt casserole dish and top with crumb topping.
  6. Bake 18-20 minutes or until bubbly.
