Ingredients

  • 1/2 pound bacon
  • 3 extra large russet potatoes peeled and chopped into 1/2"-3/4" pieces, about 6 cups worth
  • 1 teaspoon kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 1/2 cups shredded cheddar or Mexican blend shredded cheeses
  • 3 green onions sliced thin






Instructions

  1. COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
  2. COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
  3. Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

Ingredients

  • 2/3 Cup Cocoa Powder
  • 3 Cups Powdered Sugar
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 2-4 egg whites
  • 1 1/2 cup Semi Sweet Chocolate Chips
  • Equipment Needed
  • Cookie Scoop
  • Baking Pan
  • Parchment Paper

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Set aside two baking sheets with parchment paper.
  3. IN a large bowl whisk together the powdered sugar with the cocoa powder and salt.
  4. Whisk in vanilla and 2 egg whites.
  5. Beat just until the batter is moistened. You are looking for a brownie-like consistency in the batter. Add additional egg whites until you reach that consistency; I used all 4.
  6. Stir in chocolate chips.
  7. Scoop the batter by the tablespoonfuls onto the prepared baking sheets. Leave plenty of space for each cookie to spread.
  8. Bake for 12 - 14 minutes or until the tops are glossy and lightly cracked.
  9. Let the cookies cool completely on the baking sheet and then store in an airtight container for up to 3 days.

Ingredients

  • 1 tortilla
  • 2 Tablespoons marinara or pizza sauce
  • 1/4 c. shredded mozzarella cheese
  • Optional additional ingredients: grated Parmesan cheese, sliced pepperoni, mushrooms, onions, bell peppers, sausage, or any other pizza toppings of your choice
  • For dipping: warm marinara sauce

Instructions

  1. Preheat a flat griddle or a large skillet over medium heat.
  2. Spread marinara sauce on half of the tortilla. Sprinkle with shredded mozzarella cheese, and any other toppings of your choice. Add another layer of mozzarella over toppings.
  3. Fold tortilla over.
  4. Spray griddle with cooking spray and cook quesadilla for 2-3 minutes per side, or until browned. Remove to a cutting board and allow the quesadilla to cool for a few minutes. Cut into triangles and serve.

  Ingredients

  • 2 heȧds cȧuliflower, cored ȧnd cut into bite-sized pieces
  • 1 cup heȧvy creȧm or whole milk
  • 2 cups shȧrp shredded cheddȧr
  • 1 bȧr creȧm cheese
  • ½ stick butter
  • Sȧlt & pepper to tȧste

Instructions

  1. Preheȧt oven to 400°F.
  2. Microwȧve cȧuliflower for 7-8 minutes, until pȧrtiȧlly tender. No need to ȧdd wȧter.
  3. Plȧce creȧm, butter, cheeses, mustȧrd, sȧlt ȧnd pepper in ȧnother microwȧve sȧfe bowl. Heȧt on high 3-4 minutes, until bubbly. Whisk to incorporȧte melted cheeses.
  4. Spreȧd cȧuliflower in ȧ bȧking dish. Sprinkle with ȧdditionȧl sȧlt.
  5. Pour cheese over ȧll ȧnd stir to cover ȧll pieces of cȧuliflower.
  6. Bȧke, uncovered for 20 minutes. Sȧuce will thicken upon stȧnding for 5-10 minutes.
